What are these traces of rot on my (old) apples that I took a bit to eat (they are stewed now...).
Non-organic early apples bought during the summer...
Inside it does not exceed a few mm ... and it is not crooked?

I would say that as it dried, the skin cracked, and the flesh oxidized on the surface.

Maybe I don't know...on 2 of the lot it appeared before they were so withered...the interior was 95% ok...
What's funny is that it looks like wormholes...so I'm thinking more of a bacterial attack on the skin?

Okay...I eat them like that without cleaning or peeling...Question of apples (and a lot of fruit for that matter) I'm worse than the crazy jungle tiger.. I eat everything...

I also eat them with the skin. I was thinking of the ones I keep in the cellar. In April and May, I still eat them, but my wife no longer finds them to taste cellar, which is not untrue.
Those of Christophe seem to be golden ones which wither relatively quickly. It's also the kind of overly sweet apples that we don't like at home.

a fruit and vegetable manager, explained to me that apples, for example, were kept cool, sometimes for a long time, 1st thermal shock, then transported at temperature, 2nd shock, arrived at the wholesaler, cool, 3rd shock, transported back to the stores, 4th shock, put in the fridge while waiting to be put on the shelves, 5th shock, put back on the shelf, 6th shock, taken over by the customer, we will say that the transport remains at about the same tp as the spread, then put in the fridge, 7th shock, to finish in the fruit basket .... 8th shock.
So, after all these thermal shocks, there is little hope of keeping them for long....
My wife is going to pick them straight from the tree, this year, 1.40€ per kg, not put in the fridge, and until Christmas, they pass very well, the last ones end up in compote .... we don't have try until February, I admit ...

When in winter they do not freeze during transport and handling... There it is 3 days of conservation at the consumer...

Those pictured above have 40 days in the kitchen (so not cool) with 2 heat waves in August!
In this regard, I harvested yesterday: 2 well-filled crates, almost 13 kg...it's a small variety (no idea of the name!) but it tastes excellent between jonagold and granny smith... .I will bring one to my primeur that he tastes he may know what variety it is...
