on this video, it is indeed steam that heats up and we see the sausage burst, on the other hand on the Russian one it looks more like electrolysis which releases hydrogen and oxygen (that can fart). Another thing if they are salty foods, electrolysis can also produce chlorine, so not really advisable to approach ...
