It all depends on the turbine you actually use ...
The important parameter especially the water height. You have bernoulli:

Between 2 sections:

A, at the top of the dam the speed is negligible:

load = H

B, at the bottom of the dam, no height:

load = V² / 2g

Then there is your turbine, and it can be centrifugal, axial or tangential (paddle wheel and pelton turbine)
