for 5 kw on 150 m I think that 10 mm² should be enough
but if by chance you should one day reinforce the power takes as standard the edf standard which gives you for a normal supply of 9 kw of 16 mm²
obviously it's more expensive

I brought the water head straight to the wheel and the centrifugal ejection effect always occurs. I think I have to build a
upper apron or review the space between my buckets
the wheel is currently turning at 36tminute with 210l second
so still work to maximize the performance of my wheel

I tried to reduce the flow but the wheel keeps spinning for me too fast the buckets no longer fill up properly or find a system to slow down the wheel :?:

I suppose that for your tests your wheel turns idle which generates this phenomenon
try to brake it - what will happen when you have mounted your alternator - you can adjust your flow at that time - that means that it must be adjustable according to the load

I would even provide a motorized valve, to later be able to control the water flow to the voltage produced by the generator.

When there is no load on the generator, it will oppose little resistant torque, the wheel will turn faster and therefore the voltage at the output of the generator will be important.
When you connect a load to the generator, the resistant torque will be high and the wheel will slow down, the voltage at the output will collapse.
A small regulation which increases the water flow when the tension decreases would be interesting.
