A miracle of food preservation at the bottom of my fridge?

Everything is summarized in 1 image: a photo of the same batch of potatoes bought months ago and stored for weeks at the bottom of the same fridge (2 were completely rotten ... not in the photo ... 1 was amputated rotting!):

Potatoes are already programmed to keep from one season to the next and the cold significantly extends this capacity by slowing down their metabolism ...
