Potato with a hole in it with a moldy cavity?

Decidedly, it is the period of the vegetables with holes because after having come across carrots with holes Here I come across a potato with a cavity ... moldy ??

Out of the few thousand potatoes that I have cut in my life, I had never seen this ...

Outdoors there are no punctures and the potato is quite "healthy" ... the stuff appeared while growing ...

Potato, not washed yet full of soil, bought from the local local producer.

What can this be for you, the vegetable garden specialists?

Beautiful manufacturing defect. Wait a little longer, the year is not over, we will see more anomalies of this kind.
I am thinking of a bacterium which was attached to the tuber from its early childhood, then founded a family which found itself trapped and without air.
