Exact, for the manpower, the saffron pistils are 100% collected because it is a culture in closed environment and in aquaponics.

So, even assuming that your lucubration has any relevance (which is not demonstrated), the price per kg is not a good representation of the value of this production: it should rather know the hourly gain harvesting ...
