Exactly, the Gruyère is made of ... Gruyère, and it has no holes, unlike the Emental which has, in fact, absolutely nothing to do.

This is completely off topic, but here is a photo of the Gruyère ripening cellars in Guyère:

Since one day, a long time ago, I ate a real Gruyère (you're right, it deserves a capital letter!) While passing through Gruyère, it annoys me that we call the industrial Emental of "gruyère" " in France...

I can only plussoyer !

When will I have a fondue at my place, with accommodation and everything ...?

We would have things to talk about, I have room, so I could accommodate a lot of econologists (well, it's been a few kilometers for some ...)

A + ;-)

The Gruyère still has "holes",
There is that of the taster / refiner! : Cheesy: aaaaah gourmands ...
And also residual holes due to fermentation (but they are rare)

For fondue it's ok ...! :D

PS: and I didn't know that the Emmental was French !!! >>> : Wink: in France you have Comté with a nice fruity taste: a real delight with a sufficiently long ripening!

It did not fall on deaf ears!

Are there paragliding sites nearby? :)

Besides, why not have a real meeting between the members of the forum? As we did in 2009 in Belgium?

Then there was another organized by the members of the southwest: calendar / meeting-of-econologists-of-the-southwest-t7627.html (ahhh dissent lol)

My case is serious, I am ashamed to say it but I have still done absolutely nothing in the garden, nothing nothing ...

We attack big jobs at home (indoor and outdoor), and unfortunately I only have two hands, so ... I will remain reader-spectator for this season.

But I enjoy reading you, rest assured.

I did not write that Emmental is French. I talked about the (industrial) production of French Emmental.

For a very long time, Tokay was produced in Alsace. Until this appellation is reserved for its region of origin. So we are now making "Pinot gris" ...

A priori, for Emmental, Switzerland has not (or not yet?) Obtained the exclusivity of the appellation. There is always French Emmental (industrial). That the majority of French people continue to call "Gruyère rappé" (when it is) ...

Ditto for the féta ...

There are things which "navigate" between the designation of origin or the geographical indication and the common name ... Like Bic or klaxon or "caddy" in the industrial field. The price of fame.
