2000 hours of work per year for 1000m², that represents 1 motivated person over the year or 2 less motivated people.
On 1 ha, we multiply by 10, or between 10 and 20 people per year.
500K € is turnover.
Divided by the number of people, it was between 50K and 25K € of turnover per person.
By neglecting operating costs : Shock: and taking the average, we arrive at € 37,5K in turnover per person.
We are around the ceiling for self-employed people.
It remains to remove social charges and it's still okay to live but it is not Peru either, far from 100K € per ha for one person : Lol:

PS: yes, to multiply to divide then it is not sober but it was to pass by the surface of 1ha.
